Raja's favourite ingredient

The main difference between Mr. Wang and Raja is Mr. Wang will eat anything and Raja has preferences. Raja loves sweet potato done and today I whipped up Sweet Potato Waffles.


Ten years ago, I discovered this recipe and it became my go-to for waffles that could become an easy work lunch. This waffle tastes great with bacon, cheese and of course fruit. I think even a side of eggs would work well.


I don’t often make the plain original waffles because this one has so much more flavour and you don’t need to add any syrup to sweeten it to make it more enjoyable.




It’s a bit of effort to cook up the sweet potato and I’m grateful for my secret weapon – Mr. Wang. He cuts up the sweet potatoes and cooks and emulsifies them in the slow cooker. From there, it gets divided up into 1 or 2 cup portions and put in the freezer for me to use.
