My childhood favourite pancake

I generally don’t like flipping pancakes and even though I loved crepes as a kid, we had a 10” cast iron skillet which was super heavy. It was hard on the wrists and took a long time, especially when you are making enough for a family of 6.


Shortly after Mr. Wang and I were married, we took my aunt out to the small town where her cousin was living. Her cousin had been a close family friend to our family and due to her cancer returning, was not able to make it to our wedding. We intentionally recorded the ceremony and brought a few pictures from the day, so we bring it to her and have a lovely visit.


We had brought food for lunch which we almost had finish and before we knew it, it was supper time. She didn’t want us to go to any trouble and wasn’t up for going out to eat as her appetite was missing.


My aunt suggested we make crepes as we had leftover deli ham and cheese. We attempted to make the batter without a recipe. At the time, we didn’t have cell phones or access to a computer and our cousin didn’t have recipe books. We even had to knock on the neighbour’s door to get enough flour for the batter.


Between my aunt and I, we concocted a crepe batter and cooked them off. It seems every time that I make crepes, it reminds me of her and the kindness she was.


Using my cousin’s non-stick skillet, it was fairly easy to rotate the batter around the base. I noticed that size does matter too. I ended up purchasing 2 smaller skillets (not cast iron) for when I’m inclined to actually flip pancakes.
